The Whole Dover Sole for Two is exclusively available on Thursday and Friday evenings, personally served by General Manager Zachary Bourne.

Chef Jansen’s inspiration for the Whole Dover Sole for Two stemmed from his time in Paris, where he was captivated by the delicate and refined preparation of this fish at table-side. He states, “It was such a delicate and lovely fish, and to see it boned table-side with accouterments that really enhanced the flavor of it was incredible to me. Having grown up in the Jersey Shore — and having caught plenty of flounder in my day — this was a whole different type of fish. We’re doing dover sole during the summer months simply because it is the epitome of summertime in one dish.”
