On the picturesque East Passyunk Avenue stands Townsend EPX, Chef Townsend Wentz’s haven of French culinary delight. And this October, it’s set to host an event that promises a memorable journey through France. Enter “Vins et Saveurs de France,” a meticulously crafted five-course pairing dinner that brings together Chef Wentz’s genius and Seth Biederman’s expertise from The Wine Merchant, slated for 7 p.m. on Wednesday, October 25th. 

As guests step into Townsend EPX that evening, they’ll embark on a sensory journey across France, seamlessly blending the country’s rich winemaking tradition with its unparalleled gastronomic heritage. The Wine Merchant’s well-curated wine selection promises to take attendees through the mosaic of French wine regions, while Chef Wentz’s interpretation of French dishes delivers culinary perfection plate after plate.

Attendees can look forward to marinated tuna that dances with flavors of charred clams, cucumber, honeycrisp apple, and creme fraîche. The richness of black truffle stuffed halibut melds beautifully with Savoy cabbage and an Ossetra-Vermouth Nage. The lobster and sweetbread fricassee, infused with tarragon and paired with brioche in a sauce Américaine, is a masterclass in flavor pairing. The Lamb ‘en crepinette’ is a homage to the season, as chanterelles and figs blend with fall vegetables ‘en cocotte’ in a thyme-lamb jus. And what better way to conclude than with a Pain d’Epice aux Chocolat Souffle, perfectly accented by Pernod Chantilly.

In Chef Townsend Wentz’s words, the collaboration with Seth is a much-anticipated event. “We are so excited to cook (and drink wine) with our good friend Seth,” remarked Wentz, believing that the combination of their expertise will elevate Vins et Saveurs de France to a unique pinnacle of culinary experiences.

The intimate setting, priced at $145 per person, is not just about food and wine. Guests will have the privilege of on-site guidance from Biederman and the in-house Sommelier of Townsend EPX, Gordana Kostovski, making each moment and each sip a learning and indulgent experience.
