Chef and owner Dave Conn begins by reducing Pernod Absinthe just enough to concentrate its distinct anise-forward essence while ensuring the alcohol content is cooked off. He then churns a classic crème anglaise and folds in hand-chopped 53.8% dark chocolate for added texture. A subtle touch of organic all-natural food coloring gives the ice cream its signature pale green hue. To finish, the dessert is served in a chilled steel coupe glass, topped with lightly sweetened Chantilly cream, and dusted with cocoa powder—an elegant nod to the spirit’s legendary mystique.
