Forsythia is ushering in the new year with a spectacular event: La Fête du Canard. This exclusive celebration, scheduled for Thursday, January 11, is a tribute to Chef Christopher Kearse’s Dry-Aged Rohan Duck, a culinary masterpiece that has earned him accolades and a dedicated following.
The evening promises a compelling journey through five meticulously crafted courses, each highlighting the unique flavors and textures of the Dry-Aged Rohan Duck. The culinary adventure begins with a Hudson Valley Foie Gras and Duck Confit Terrine, accompanied by black walnut, sweet potato, and a black truffle gastrique, all elegantly served on onion ash brioche. Next is a Fennel and winter Chicory creation featuring a fermented kabocha squash vinaigrette and a rich Duck Neck and porcini Consummé.
The third course is a delightfully decadent Époisses and Caramelized Onion Stuffed Crêpe, enriched with a duck heart ragout and a cured duck egg. Sassafras Roasted Duck Breast headlines the fourth course, with butternut squash and crispy sunchokes drizzled with a flavorful Sauce au Poivre. To conclude this gastronomic journey, a sweet finale awaits in the form of a Baba au Rhum, accompanied by duck fat brioche, eight-hour roasted pineapple, and caramelized white chocolate crémeux.
Chef Kearse shared his excitement for La Fête du Canard: “We wanted to start the new year and the beginning of the 2024 French AF Series with one of our favorites—the dry-aged Rohan duck. The 10-Day Dry-Aged Whole Duck for Two has been a hit with guests throughout the year, and I wanted to explore the idea of hosting a dinner centered around five variations of what has become one of our signature entrées.”
