CO-OP Restaurant & Bar invites guests to indulge in the rich heritage and flavors of the mid-Atlantic region as Executive Chef Kyle Berman embraces the abundance of seasonal produce with the exciting new “Taste of Summer” Series. This culinary celebration highlights three beloved warm-weather staples: corn, blueberries, and tomatoes.
As the summer solstice approaches, CO-OP kicks off its “Taste of Summer” Series with various dishes featuring corn sourced from Lancaster Farm Fresh Co-op. Guests can relish in the exquisite flavors of a Local Crab and Corn Crepe, where pickled watermelon, charred corn, and aromatic crab sauce create a delectable combination. For an enjoyable delight, the Corn Tortellini en Brodo offers pancetta, basil, and pine nut-infused broth enveloping delicate corn-filled pasta pockets. Corn Hoe Cakes, complemented by charred spring onion aioli and chowchow, provide a delightful and savory experience.
In July, the “Taste of Summer” Series transitions to blueberries’ sweet and tangy allure. Savor the freshness of Sweet Amalia Oysters, accompanied by lemon, verbena, and a refreshing blueberry granita. The Grilled Grouper takes on a delightful twist with caramelized vichyssoise, melted leeks, and a tantalizing blueberry agrodolce. End your meal on a sweet note with the Blueberry Tart, featuring creamy mascarpone and a touch of zesty lemon.
As August arrives, CO-OP celebrates the peak of tomato season with a trio of tempting tomato dishes. Start with the Heirloom Tomato Toast, a symphony of flavors featuring sourdough, goat cheese, pine nuts, basil, and balsamic reduction. The Fried Green Tomatoes showcase burrata, pine nuts, golden tomato purée, and delicate mache for a taste of Southern charm. Indulge in the robust Spaghetti Arrabbiata, where local crab, cherry tomatoes, spicy tomato sauce, and Parmesan create perfect harmony.
Throughout the “Taste of Summer” Series, these featured dishes will be available every evening during dinner service from 4 pm to 10 pm, alongside the regular menu.
