Square 1682 announced that newly-appointed Executive Chef Patrick Czerniak would take over culinary operations with a brand-new menu of thoughtful and seasonal New American cuisine launching on Wednesday, May 22.
Chef Patrick Czerniak, a New Jersey native, brings an innovative spin to New American cuisine by incorporating global influences such as Polish, Asian, and Italian into an all-new and imaginative dinner menu. An alumnus of Philadelphia’s revered Walnut Hill College, Czerniak first fell in love with cooking as a child. His affinity for the kitchen took shape when he would spend mornings cooking with his mom, who worked the overnight shift at a local plastics factory. These moments together were special, and his love for cooking grew further through time spent with his grandmothers, often cooking classic Polish cuisine from their family’s roots.
Czerniak served as Executive Sous Chef at University City’s noted Walnut Street Café and, most recently, as Executive Chef at Cantina Feliz. His culinary specialty, seen on Square 1682’s soon-to-debut menu, is unique and abstract takes on global cuisine, with the occasional Polish, Asian, and Italian influence and technique appearing in various dishes.
The upcoming dinner menu, set to debut on May 22, will offer a variety of exciting and innovative dishes. Some highlights include Oysters with tomatillo salsa verde, jalapeño, and micro cilantro. Drunken Blue’s featuring arugula, blueberries, drunken goat cheese, and Marcona almonds. Hamachi Crudo with yuzu, jalapeño, and sesame. Bianca Lasagna made with broccolini, baby cauliflower, ricotta, and breadcrumbs. Fregola Cioppino, containing mussels, clams, shrimp, and sourdough bread, are among the offerings. 1682 NY Strip served with pommes frites, grilled asparagus, herb butter, and demi glaze. “Buttered” Tofu with crispy white rice, cauliflower, cilantro, and coconut milk. Salmon Panzanella with Swiss chard, warm croutons, cucumbers, heirloom tomatoes, and Gigante beans are also on the menu.
With Chef Patrick Czerniak at the helm, Square 1682 is not only introducing a new menu but also exciting additions and programming this season. Happy hour will be re-launched, the sidewalk patio will open, and Lead Bartender Alex Clark will introduce a range of seasonal sippers. Square 1682 is open daily, with dinner service operating Tuesday through Saturday beginning at 5 p.m., in addition to weekend brunch and an all-day menu available Monday through Friday.
